What a nice mom I am! One of the kids needed something related to their ethnicity for a class event and I was nice enough to get up in the morning and make Aebelskivers for them to take. They are Danish pancake balls. You cook them in the funny little pan pictured below and serve them warm with powdered sugar and syrup.
I wish we had a few more Danish and Swedish traditions. I wish I had more to pass on to my kids. I guess that's my job... to research and create traditions for our family.
